For someone who loves food and history, I am always looking for ways to use food to better understand the past. So when I learned that the WLA holds papers from Mundelein College\u2019s* Home Economics department, I had a feeling there might be some gems hiding in the files.<\/p>\n<p><!--more--><\/p>\n<p>Lo and behold, a news clipping from December 14, 1941, described a party thrown by Mundelein clubs for children at Angel Guardian Orphanage, along with recipes that Home Economics students developed for the event. The program aimed to train young women for lives as discerning and thrifty consumers and managers of their households, with an understanding of current nutritional standards to feed a healthy family. Over time, the focus shifted. After World War II, consumer science and products became an even greater focus, with field trips to Chicago department stores like Marshall Field\u2019s and experimentation with labor-saving devices and ingredients. The 1950s focused more on being a good hostess in a time of plenty, while in the 1960s the Space Race introduced new topics of study, including nutrition in space! By the 1970s, the program was increasingly scientific, focusing on preparing students to continue in medical programs elsewhere to become RDNs\u2014Registered Dietitian Nutritionists.<\/p>\n<div id=\"attachment_1400\" style=\"width: 339px\" class=\"wp-caption alignright\"><img aria-describedby=\"caption-attachment-1400\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-1400\" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/mc-home-ec-christmas-cookies-2-detail-copy-221x300.jpg\" alt=\"\" width=\"329\" height=\"441\" \/><p id=\"caption-attachment-1400\" class=\"wp-caption-text\">Image: Recipe for Christmas Jewels, Mundelein College Records, Dec. 14, 1941<\/p><\/div>\n<p>Luckily, I happen to have my own personal RDN- my mom! She completed her RDN degree at the University of Illinois in 1980, and I thought she might have some insights into nutrition through the ages, so she agreed to help me resurrect Mundelein\u2019s Christmas Jewels and provide some nutritional advice!<\/p>\n<div id=\"attachment_1391\" style=\"width: 267px\" class=\"wp-caption alignleft\"><img aria-describedby=\"caption-attachment-1391\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-1391\" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-1-768x1024.jpg\" alt=\"\" width=\"257\" height=\"338\" \/><p id=\"caption-attachment-1391\" class=\"wp-caption-text\">The opposite of bad dates!<\/p><\/div>\n<p>We put on the Great British Baking Show playlist and got to work, pitting and stuffing dates, which was actually relaxing. The gumdrops were large and had to be cut into quarters to fit inside the dates, while the walnut halves \u201cfor adults\u201d were easier to manage. Dates were popularized in the U.S. during the 1920s by California growers, alongside the craze for films set in the Near East, including <em>The Sheik<\/em> and <em>One Thousand and One Arabian Nights<\/em>, though later<em> Indiana Jones and the Raiders of the Lost Ark<\/em> made them memorable. Rest assured; these were not \u2018bad dates.\u2019<\/p>\n<div id=\"attachment_1392\" style=\"width: 262px\" class=\"wp-caption alignright\"><img aria-describedby=\"caption-attachment-1392\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-1392\" style=\"color: #333333;font-style: normal;font-weight: 300\" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-2-e1576172963100-225x300.jpg\" alt=\"\" width=\"252\" height=\"331\" \/><p id=\"caption-attachment-1392\" class=\"wp-caption-text\">Mixing&#8230;<\/p><\/div>\n<p>To start the batter, the recipe calls for margarine. My mom was surprised they even had margarine (which apparently dates to 1869!). Her rule, from her RDN education and practical experience, has always been that less processed is best, something the Mundelein students were less concerned with in an age of new, processed food products. Following my RDN\u2019s advice, we traded the highly processed margarine for some organic butter. In her words, it\u2019s a cookie, after all; it\u2019s not going to be truly healthy, so go for butter.<\/p>\n<p>In December of 1941, this recipe sits at an interesting spot between the Great Depression and World War II; the U.S. had only just entered the war a week earlier on December 7, following Pearl Harbor. Rationing would only begin the next summer and would have affected both butter and margarine, and likely other ingredients like the dates and sugar. But the Depression put other pressures on this recipe\u2014my research suggested that during the Depression, brown sugar was cheaper than white sugar, though I still went for light brown sugar\u2014dark felt too decadent.<\/p>\n<div id=\"attachment_1393\" style=\"width: 262px\" class=\"wp-caption alignleft\"><img aria-describedby=\"caption-attachment-1393\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-1393\" style=\"color: #333333;font-style: normal;font-weight: 300\" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-3-768x1024.jpg\" alt=\"\" width=\"252\" height=\"332\" \/><p id=\"caption-attachment-1393\" class=\"wp-caption-text\">Batter divided in half!<\/p><\/div>\n<p>Apart from the mysterious typo (\u201cstir in 2\/3 tbsp\u201d of what?), things proceeded smoothly with the dry ingredients, into which we stirred one beaten egg and \u201ccommercial\u201d sour cream\u2014what a relief to not have to make my own! According to the article, the added egg makes this recipe healthy, so parents don\u2019t have to worry about their children getting enough nutritious food during the holidays. My mom laughed. One egg stretched over a whole batch of cookies? Compared to all that sugar?<\/p>\n<p>Everything went together to form a very tasty batter, which we split in half. Into one half went the gumdrop-stuffed dates, and the other the walnut-stuffed ones. After much tossing, and anxious wondering about what on earth this would look like when baked, we spooned them out onto baking sheets and baked them for ten minutes.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone wp-image-1394\" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-4-e1576172981777-225x300.jpg\" alt=\"\" width=\"174\" height=\"228\" \/><img decoding=\"async\" loading=\"lazy\" class=\"alignnone wp-image-1395 \" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-5-e1576172995414-225x300.jpg\" alt=\"\" width=\"174\" height=\"228\" \/><img decoding=\"async\" loading=\"lazy\" class=\"alignnone wp-image-1396 \" style=\"color: #333333;font-style: normal;font-weight: 300\" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-6-e1576173009695-225x300.jpg\" alt=\"\" width=\"174\" height=\"229\" \/><\/p>\n<p style=\"text-align: center\"><em>[More mixing and arranging for the oven&#8230;]<\/em><\/p>\n<p>The results?<\/p>\n<p>While they smelled promising, the appearance was a little disconcerting\u2014something akin to flying saucers. And the batter spread more than we expected, creating multi-cellular conglomerations, each with a date for a nucleus.<\/p>\n<div id=\"attachment_1397\" style=\"width: 594px\" class=\"wp-caption alignleft\"><img aria-describedby=\"caption-attachment-1397\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-1397 size-large\" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-7-1024x768.jpg\" alt=\"\" width=\"584\" height=\"438\" srcset=\"https:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-7-1024x768.jpg 1024w, https:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-7-300x225.jpg 300w, https:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-7-768x576.jpg 768w, https:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-7-400x300.jpg 400w\" sizes=\"(max-width: 584px) 100vw, 584px\" \/><p id=\"caption-attachment-1397\" class=\"wp-caption-text\">It&#8217;s the holiday celebration of multi-cellular life!<\/p><\/div>\n<p>Cutting one open, we found that the gumdrop had retained its shape rather than liquefying, creating a colorful, gem-like center. The flavor and chew was nice, and paired surprisingly well with the light, buttery cookie encasing it.<\/p>\n<div id=\"attachment_1398\" style=\"width: 358px\" class=\"wp-caption alignright\"><img aria-describedby=\"caption-attachment-1398\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-1398\" style=\"color: #333333;font-style: normal;font-weight: 300\" src=\"http:\/\/libblogs.luc.edu\/wla\/files\/2019\/12\/Christmas-Jewels-8-300x225.jpg\" alt=\"\" width=\"348\" height=\"264\" \/><p id=\"caption-attachment-1398\" class=\"wp-caption-text\">A very scientific tasting setup.<\/p><\/div>\n<p>The least healthy idea would have been to eat them all on my own. So as I fed them to unsuspecting coworkers and classmates the next day, I dutifully collected the reviews of the experiment:<\/p>\n<p>\u201cI like them! It\u2019s a taste of history.\u201d<\/p>\n<p>\u201cThey\u2019re pretty good!\u201d<\/p>\n<p>\u201cIt\u2019s healthy\u2014there\u2019s fruit in the middle. That\u2019s how it works, right?\u201d<\/p>\n<p>\u201cThis tastes like beer. I have no idea why. But it\u2019s good!\u201d<\/p>\n<p>\u201cThe lemon gumdrop is bright and acidic against the sweetness of the date.\u201d<\/p>\n<p>Walnut was more popular overall, yet lemon gumdrops also seemed to be a hit. What I liked most was how surprised everyone was to find that they actually liked these strange-looking cookies. The students at Mundelein in 1941 were onto something here, incorporating the popular dried dates with available ingredients while attempting to address nutritional concerns over maintaining a healthy diet during the holidays, which is still very relevant today.<\/p>\n<p>One final observation from my mom: \u201cA gumdrop, inside a date, inside a cookie. It\u2019s the turducken of desserts&#8230; with much less protein.\u201d<\/p>\n<p>So as the holidays draw near, a bit of general advice from my personal RDN: don\u2019t expect desserts to be nutritious! They can still tell us a lot about our time and about the past, and as long as you eat a variety of nutritious foods along with them, they can still be good for the soul.<\/p>\n<hr \/>\n<p><em>Scarlett is a Graduate Assistant and in the first year of her M.A. in Public History at Loyola University Chicago.
